How To Make Italian Meatballs
A stand mixer isn’t just for dessert recipes, it can be used to make great dishes like these Italian meatballs. Too often we only think of sweets when we thing of our stand mixer but it can be used for so many other foods.
This recipe starts with a basic ground turkey and ground beef base. Like a meatloaf you will use eggs and breadcrumbs to act as a binder. The Italian flavor comes from basil, oregano and parsley.
Fresh Or Dried Herbs
While it is satisfying to grow your own herbs there are times when dried herbs are actually preferred. Fresh herbs are very colorful, usually have an outdoor aroma and add subtle flavors to the end of a cooking process.
Dried herbs are more concentrated in their potency and tend to react better to a cooking process. Basil and oregano especially are more noticeable as a flavoring when used dried in dishes that are exposed to high heat. This meatball recipe uses dried herbs, the meat will be cooking at a high temperature and dried herbs will work much better.
You also need to be aware of the differences in the amount to be used when choosing between fresh or dried. One teaspoon of dried herbs will require 1 tablespoon of fresh to achieve the same flavor.
Choosing The Right Ground Meat
Even though you are adding some fat to the recipe with an egg, you don’t want to get ground beef that is too lean. Look for an 80/20 blend or even a 90/10 blend. Most ground turkey has little or no fat, you don’t have options when buying this product.
You don’t need a lot of equipment for this recipe. A stand mixer, a small frying pan, a baking sheet and a rack will serve nicely.
- 2 teaspoons olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 3/4 cup seasoned bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 large eggs, lightly beaten
- 1 teaspoon each dried basil, oregano and parsley flakes
- 3/4 teaspoon salt
- 1 pound lean ground turkey
- 1 pound lean ground beef (80% lean)
Preheat oven to 375°. In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Cool slightly.
Using the bowl on your stand mixer, combine bread crumbs, cheese, eggs, seasonings and onion mixture. Add turkey and beef; mix lightly but thoroughly. Shape into 1-1/2-inch meatballs.
Place meatballs on a rack coated with cooking spray in a 15x10x1-in. baking sheet. Bake until lightly browned and cooked through, 18-22 minutes.
There are many ways to serve these delicious Italian meatballs. Add them to a marinara sauce and use to top pasta. Bake with cheese and spaghetti sauce. Use them in sandwiches-the options are limitless. This easy recipe can lead to many great meals.
